Instructions
Step 1: Prepare Eggplant
1. Preheat grill or grill pan over medium-high heat.

1. Place eggplant slices on the grill and cook 5–7 minutes per side, until tender and grill marks appear. Remove and let cool slightly.
Step 3: Make Mint Yogurt Sauce
1. In a small bowl, mix Greek yogurt, minced garlic, lemon juice, chopped mint, and a pinch of salt.
