Ingredients

2 cloves garlic, minced

Juice of ½ lemon

Salt & pepper, to taste

For the Cream-Drizzled Potatoes

500g baby potatoes, halved or quartered

1 tbsp olive oil

Salt & pepper, to taste

¼ cup light cream or Greek yogurt

1 tsp lemon juice

1 tsp chopped fresh parsley

For the Garlic Mushrooms

200g button or cremini mushrooms, sliced

1 tbsp olive oil

2 cloves garlic, minced

Salt & pepper, to taste

Optional: 1 tsp fresh thyme

Instructions

1. Marinate and Grill the Chicken

Mix olive oil, garlic, lemon juice, oregano, thyme/rosemary, salt, and pepper.

Rub over chicken and marinate 15–30 minutes.

Grill on medium heat 6–8 minutes per side, until fully cooked (internal temp 75°C / 165°F).

Let rest 5 minutes before slicing.

2. Roast the Potatoes

Preheat oven to 200°C (400°F).

Toss potatoes with olive oil, salt, and pepper.

Roast 25–30 minutes until golden and tender.

Drizzle lightly with cream or Greek yogurt, a touch of lemon juice, and sprinkle parsley before serving.

3. Saute the Garlic Mushrooms

Heat olive oil or butter in a pan over medium heat.

Add garlic and saute 30 seconds until fragrant.
