Ingredients

For the Grilled Mexican Chicken:

1 lb boneless, skinless chicken breasts or thighs

1½ tbsp olive oil

Juice of 1 lime

2 garlic cloves, minced

1 tsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp oregano

¼ tsp cayenne pepper

½ tsp salt

¼ tsp black pepper

For the Guacamole:

2 ripe avocados

Juice of 1 lime

1 small tomato, finely diced

2 tbsp red onion, finely chopped

1 tbsp fresh cilantro, chopped

½ jalapeno, minced (optional)

Salt and pepper, to taste

Instructions

1. Marinate the Chicken

In a bowl, whisk together olive oil, lime juice, garlic, and spices. Coat chicken in the marinade and let sit for 15–30 minutes (up to overnight in the fridge).

2. Grill the Chicken

Preheat a grill or grill pan to medium-high heat. Grill chicken for 5–6 minutes per side, or until internal temperature reaches 165°F (75°C). Rest for a few minutes before slicing.

3. Make the Guacamole

Mash avocados in a bowl until chunky-smooth. Mix in lime juice, tomato, onion, cilantro, jalapeno (if using), salt, and pepper.

4. Serve

Slice chicken and serve with a generous scoop of guacamole. Great with a side of rice, grilled corn, or a salad. Garnish with extra cilantro and lime wedges.
