Ingredients
For the salad:
3 ripe but firm peaches, halved and pitted
1 tbsp olive oil
4 cups arugula (or mixed greens)
1 large ball of burrata cheese (or 2 smaller ones)
1/4 cup fresh basil leaves
1/4 cup toasted walnuts or pistachios
Salt and pepper to taste
Optional additions:
6–8 cherry tomatoes, halved
A few thin slices of prosciutto (optional for non-vegetarians)
For the balsamic glaze:
1/4 cup balsamic vinegar
1 tsp honey or maple syrup
Instructions
1. Grill the peaches
Brush peach halves with olive oil.
Grill cut-side down on a grill pan or outdoor grill for 3–4 minutes, until charred and caramelized.
2. Make balsamic glaze
In a small pan, simmer balsamic vinegar and honey over low heat until reduced by half and syrupy (about 5 minutes). Let cool slightly.
3. Assemble the salad
Spread arugula on a platter.
