⏱ Time:
Prep Time: 15 minutes
Cook Time (grill peaches): 5–7 minutes
Total Time: 20–25 minute
Ingredients
For the Salad:
2–3 ripe peaches, halved and pitted
Olive oil, for brushing
5 oz arugula or baby greens
1 ball fresh burrata cheese (about 4 oz)
¼ cup red onion, thinly sliced
¼ cup fresh basil leaves
Optional: 1 tbsp pomegranate seeds or balsamic glaze for garnish
For the Savory Pistachio Dressing:
¼ cup shelled pistachios (preferably unsalted)
2 tbsp lemon juice
1 tbsp white wine vinegar or red wine vinegar
1 garlic clove
1 tsp Dijon mustard
3 tbsp extra vingin olive oil
1 tbsp water (to thin, as needed)
Salt & black pepper, to taste
Instructions
1. Grill the Peaches
Preheat grill or grill pan over medium-high heat. Brush peach halves lightly with olive oil. Grill cut-side down for 3–4 minutes until grill marks appear and the fruit is slightly softened. Remove and slice.
2. Make the Dressing
In a blender or food processor, combine pistachios, lemon juice, vinegar, garlic, mustard, and olive oil. Blend until mostly smooth (a little texture is okay). Add a splash of water to loosen if needed. Season with salt and pepper.
3. Assemble the Salad
On a platter or individual plates, layer arugula, grilled peach slices, red onion, and torn basil. Gently tear open the burrata and nestle it into the greens.
4. Dress and Serve
Drizzle generously with the pistachio dressing. Garnish with pomegranate seeds or a light balsamic glaze if desired. Serve immediately.
Tips
No grill: Sear peaches in a hot pan for a similar effect.
Add protein: Try with prosciutto ribbons, grilled chicken, or chickpeas.
Make it a meal: Serve with crusty bread or toasted flatbread.

Can I prep ahead?
Grill peaches and make the dressing up to a day in advance. Assemble right before serving for the freshest texture.
