Ingredients:

Veggies (choose a mix):

1 zucchini, sliced into thick rounds or half-moons

1 yellow squash, sliced

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 red onion, cut into wedges

1 cup mushrooms (button or cremini), whole or halved

1 cup cherry tomatoes

Mediterranean Marinade:

3 tbsp extra virgin olive oil

2 tbsp lemon juice

2 cloves garlic, minced

1 tsp dried oregano or Italian seasoning

Salt and black pepper, to taste

Optional: 1 tbsp balsamic vinegar or a touch of honey

Other:

Wooden or metal skewers (soak wooden skewers in water for 30 mins)

Instructions:

1. Prep Veggies:

Wash and cut vegetables into similar-sized pieces to ensure even grilling.

2. Make the Marinade:

In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.

 3. Marinate:

Toss vegetables in the marinade and let sit for 20–30 minutes (optional, but enhances flavor).

4. Skewer:

Thread marinated veggies onto skewers, alternating colors and textures.

5. Grill:

Preheat grill or grill pan to medium-high heat.

Grill skewers for 10–12 minutes, turning every few minutes until tender and lightly charred.

 6. Serve:

Serve warm, drizzled with any leftover marinade or a squeeze of fresh lemon juice. Garnish with fresh herbs if desired.
