Ingredients (for 4 skewers – serves 2):
200g Halloumi cheese, cut into 1-inch cubes
12 cherry tomatoes
12 asparagus spears, trimmed and cut in hal
2 tbsp olive oil
1 garlic clove, minced
1 tsp dried oregano (or fresh thyme)
½ tsp chili flakes (optional)
Salt & black pepper, to taste
Wooden or metal skewers (if using wood, soak in water 30 min)
Instructions:
Prep ingredients:
Cut Halloumi into equal-sized cubes.
Snap or trim woody ends off asparagus.
If thick, blanch asparagus in boiling water for 1 minute and rinse with cold water.
Marinate:
In a bowl, mix olive oil, minced garlic, oregano, chili flakes, salt, and pepper.
Gently toss the Halloumi, tomatoes, and asparagus in the mixture. Let marinate for 15–30 minutes.
Assemble skewers:
Alternate pieces of Halloumi, cherry tomato, and asparagus on each skewer.
