Ingredients:
200g halloumi cheese, cut into 2 cm cubes
1 medium aubergine (eggplant), cut into 2–3 cm chunks
200g cherry tomatoes (or grape tomatoes)
2 tbsp olive oil

1/2 tsp smoked paprika (optional)
Salt & pepper, to taste
1 tbsp lemon juice
Fresh parsley or mint, chopped (for garnish)

If using wooden skewers, soak in water for 15 minutes.
Instructions:
Preheat the Grill or Oven:
Grill: Heat to medium-high.
Oven: Preheat to 200°C (400°F).
Prepare the Veggies and Cheese:
Cut aubergine and halloumi into bite-sized cubes.
In a bowl, toss aubergine with 1 tbsp olive oil, salt, pepper, and oregano. Let sit 5–10 minutes to soften slightly.
Assemble the Skewers:
Thread the ingredients onto skewers in alternating order: tomato → halloumi → aubergine. Repeat
Season and Oil:
Brush the skewers with remaining olive oil and sprinkle with paprika (if using).
Grill or Roast:
Grill: Cook for 8–10 minutes, turning every few minutes until halloumi is golden and aubergine is tender.
Oven: Roast on a lined tray for 15–18 minutes, flipping halfway.
Finish and Serve
Drizzle with lemon juice and garnish with chopped herbs.
