Ingredients

For the Potatoes:

6 medium Russet or Yukon Gold potatoes (scrubbed clean)

4 tbsp olive oil

4 cloves garlic (minced)

1 tsp salt

½ tsp black pepper

½ tsp paprika (optional, for a smoky flavor)

1 tsp fresh thyme leaves (or ½ tsp dried)

For the Filling & Topping:

6 slices bacon (cooked and crumbled)

1 cup cheddar cheese (shredded)

½ cup Parmesan cheese (grated)

2 tbsp chopped fresh parsley (for garnish)

½ cup sour cream (for serving, optional)

Instructions

1. Prep the Potatoes

1. Preheat oven to 400°F (200°C).

2. Place each potato between two wooden spoons or chopsticks and make thin slices, about ⅛-inch apart, stopping just before cutting through (this creates the Hassel back effect).

2. Season & Bake

3. In a small bowl, mix olive oil, garlic, salt, pepper, paprika, and thyme.

4. Using a brush or spoon, coat the potatoes thoroughly, making sure to get the mixture into the slices.

5. Place the potatoes in a baking dish and cover loosely with foil.

6. Bake for 40 minutes.

3. Add Bacon & Cheese

7. Remove the foil and carefully insert bacon pieces into the potato slits.

8. Sprinkle the potatoes with cheddar and Parmesan cheese.

9. Bake uncovered for another 15-20 minutes until the potatoes are crispy on the edges and golden brown.
