Healing Turmeric Chicken Soup

Servings: 4-6 people
• 2 tablespoons olive oil, avocado oil, unrefined coconut oil, or ghee
• 2 shallots, chopped
• 5 cloves fresh garlic, minced
• 1-1/2 lbs boneless, skinless chicken breast or thighs
• 8 oz mushrooms (brown beech or your preferred variety)
• 5 large carrots, peeled and chopped
• 5 celery ribs, chopped
• 1 cup uncooked brown rice
• 6 cups chicken or turkey bone broth
• 2 cups water
• 2 tablespoons freshly grated ginger
• 2–3 teaspoons turmeric powder
• Cayenne pepper, freshly ground black pepper, and sea salt to taste (about 1/4 teaspoon each)
• 2–3 tablespoons freshly squeezed lemon juice
• Zest of 1/2 lemon
• 2 tablespoons freshly chopped parsley, to garnish
Directions:
1. In a large pot, heat the olive oil (or oil of your choice) over medium heat. Add the shallots and garlic, cooking for 2–3 minutes until softened and fragrant.
2. Add the chicken breasts or thighs to the pot and cook for 5–6 minutes on each side until lightly browned. Remove the chicken from the pot and set it aside to cool.
3. In the same pot, add the mushrooms, carrots, and celery, sautéing for 5–6 minutes until they begin to soften.
4. Stir in the grated ginger, turmeric powder, cayenne pepper, black pepper, and sea salt. Cook for 1 minute to toast the spices.
5. Add the chicken bone broth, water, and uncooked brown rice. Bring the soup to a boil, then reduce the heat to a simmer.
6. While the soup is simmering, shred the cooked chicken into bite-sized pieces using two forks.
7. Add the shredded chicken back into the pot and simmer for 30–40 minutes, until the rice is tender and the soup is rich in flavor.
8. Stir in the lemon juice, lemon zest, and adjust seasoning if needed.
9. Ladle the soup into bowls and garnish with freshly chopped parsley.
