Juice of ½ lemon

Optional: 1 tbsp chopped fresh parsley or dill

For the Bowl:

2 cups cooked brown rice, white rice, or cauliflower rice

½ cup cucumber, diced

½ cup cherry tomatoes, halved

¼ cup red onion, finely sliced

¼ cup crumbled feta cheese

¼ cup tzatziki sauce

1 tbsp Kalamata olives, sliced

Fresh lemon wedges, for serving

Instructions

1. Cook the Rice

Cook rice according to package instructions or use pre-cooked rice for convenience.

2. Saute the Turkey

In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant (about 30 seconds). Add ground turkey and break it up as it cooks.

Sprinkle in oregano, cumin, paprika, onion powder, salt, and pepper. Stir well and cook for 6–8 minutes, until turkey is browned and cooked through. Finish with lemon juice and fresh herbs if using.
