Ingredients
4 bone-in, skin-on chicken thighs (or breasts/drumsticks)
3 tbsp olive oil
3 cloves garlic, minced
Juice + zest of 1 lemon
1 tsp dried oregano
1 tsp paprika
½ tsp cumin (optional, for depth)
Salt & black pepper, to taste
Vegetables:
1 zucchini, sliced
1 red bell pepper, sliced
1 red onion, cut into wedges
1 cup cherry tomatoes
1 cup baby potatoes, halved
½ cup Kalamata olives
Garnish (optional):
Fresh parsley, chopped

Instructions
1. Marinate chicken
In a bowl, whisk olive oil, lemon juice + zest, garlic, oregano, paprika, cumin, salt & pepper.
Rub chicken with mixture. Marinate 15–30 minutes (or overnight if possible).
2. Prepare vegetables
Toss zucchini, bell pepper, onion, potatoes, and cherry tomatoes with a drizzle of olive oil, salt, and pepper.
3. Assemble baking dish
Place chicken on a baking tray or dish.
Scatter vegetables around. Add olives.
4. Bake
Preheat oven to 400°F (200°C).
Bake 40–45 minutes, until chicken is golden and reaches 165°F (74°C).
5. Finish & serve
Garnish with fresh parsley and feta crumbles.
Serve hot with warm pita or Couscous
