Chicken Marylands are marinated with fresh herbs, garlic, and olive oil, then roasted until crispy on the outside and juicy inside. A rustic, Mediterranean-inspired dish that pairs beautifully with roasted vegetables, potatoes, or a fresh salad.

Ingredients
4 chicken Marylands (leg + thigh pieces)
3 tbsp olive oil
4 garlic cloves, minced
2 tsp fresh rosemary, chopped (or 1 tsp dried)
2 tsp fresh thyme leaves (or 1 tsp dried)
2 tsp oregano (fresh or dried)
Zest & juice of 1 lemon
1 tsp salt
½ tsp freshly ground black pepper
Instructions
1. Marinate the Chicken:
In a bowl, combine olive oil, garlic, rosemary, thyme, oregano, lemon zest, lemon juice, salt, and pepper.
Rub mixture all over the chicken Marylands, under the skin if possible.
Marinate at least 30 minutes (up to overnight for deeper flavor).
2. Roast the Chicken:
Preheat oven to 200°C / 400°F.
Place chicken on a baking tray lined with parchment.
Roast for 45–55 minutes, or until skin is golden and crisp, and internal temp reaches 74°C / 165°F.
3. Optional (Extra Crispy Finish):
Broil for the last 3–4 minutes for extra-crispy skin.
4. Serve:
Rest 5 minutes before serving. Garnish with extra fresh herbs and a squeeze of lemon.
Notes & Tips
Add halved potatoes, carrots, and red onion to the tray for a complete one-pan meal.
If grilling: preheat grill to medium-high and cook ~20–25 minutes per side until cooked through.
