Ingredients

For the Chicken

4 boneless, skinless chicken breasts

2 tbsp olive oil

3 garlic cloves, minced

1 tbsp fresh rosemary (or 1 tsp dried)

1 tbsp fresh thyme (or 1 tsp dried)

1 tsp paprika

Juice of 1 lemon + lemon slices for roasting

Salt & black pepper, to taste

For the Veggies & Potatoes

500 g (1 lb) baby potatoes, halved

2 medium carrots, cut into sticks

1 red bell pepper, sliced

1 zucchini, sliced

2 tbsp olive oil

1 tsp dried oregano

Salt & pepper, to taste

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet or roasting pan with parchment paper.

Prepare chicken

In a bowl, mix olive oil, garlic, rosemary, thyme, paprika, lemon juice, salt, and pepper.

Rub mixture over chicken breasts. Let marinate while prepping veggies.

Prepare veggies & potatoes

Toss potatoes, carrots, bell pepper, and zucchini with olive oil, oregano, salt, and pepper.

Arrange on pan

Spread veggies and potatoes on the pan. Place chicken breasts on top, adding lemon slices around.

Roast

Bake 35–40 minutes, until chicken reaches 165°F (74°C) and potatoes are tender.

Broil for 2–3 minutes at the end for golden color.

Serve

Plate chicken with roasted potatoes and veggies.

Garnish with extra fresh herbs and a drizzle of olive oil.
