Herbed Chicken and Cannellini Bean Skillet
This Herbed Chicken and Cannellini Bean Skillet is a comforting, protein-rich dish that’s both easy and flavorful. Juicy, herb-seasoned chicken breasts are seared to perfection and then simmered with creamy cannellini beans, garlic, and fresh herbs. This one-pan meal is perfect for a weeknight dinner and pairs well with crusty bread or a side salad.
Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts (or 4 chicken thighs)
1 tbsp olive oil
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
For the Cannellini Beans:
1 tbsp olive oil
2 garlic cloves, minced
1 small shallot, finely chopped
1/2 tsp red pepper flakes (optional for heat)
1 (15 oz) can cannellini beans, drained and rinsed
1/2 cup low-sodium chicken broth (or vegetable broth)
1 tbsp fresh lemon juice
1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
1 tsp fresh thyme, chopped (or 1/2 tsp dried)
Salt and pepper to taste
1/4 cup grated Parmesan (optional, for garnish)
1 tbsp chopped fresh parsley (for garnish)
Instructions:
1. Cook the Chicken (10-12 minutes)
Pat the chicken dry and season both sides with oregano, thyme, garlic powder, salt, and black pepper.
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Sear the chicken for 5-6 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F / 74°C).
Transfer the chicken to a plate and cover with foil to keep warm.
2. Cook the Cannellini Beans (8-10 minutes)
In the same skillet, add another tbsp of olive oil.
Saute the minced garlic, shallot, and red pepper flakes (if using) for 1-2 minutes until fragrant.
Stir in the cannellini beans and cook for 2-3 minutes, allowing them to absorb the flavors.
Pour in the chicken broth, lemon juice, rosemary, and thyme.
Simmer for 3-5 minutes, letting the broth reduce slightly and the beans soften.
Season with salt and pepper to taste.
3. Combine and Serve
Return the chicken to the skillet, spooning some of the sauce over the top.
Let everything cook together for another 2 minutes to meld the flavors.
Garnish with Parmesan and fresh parsley.
Serve immediately with crusty bread, rice, or a side salad.
