Ingredients
For the Flatbread:
1 store-bought or homemade flatbread (or naan)
¾ cup marinated artichoke hearts, drained and halved
1 tbsp olive oil
Salt & pepper
For the Herbed Labneh:
½ cup labneh (or thick Greek yogurt)
1 tbsp chopped dill
1 tbsp chopped parsley
1 tsp lemon zest
½ garlic clove, finely grated
Salt to taste
Lemon Olive Oil:
2 tbsp olive oil
1 tsp lemon juice
½ tsp lemon zest
Toppings:
1 small handful arugula or baby spinach
2 tbsp toasted pine nuts
Shaved Parmesan (or pecorino)

Instructions
1. Roast the Artichokes
Preheat oven to 400°F (200°C). Toss artichokes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes until golden at the edges.
2. Make Herbed Labneh
Mix labneh with dill, parsley, lemon zest, garlic, and a pinch of salt. Set aside or chill.
3. Prepare Lemon Oil
Whisk olive oil, lemon juice, and zest. Set aside.
4. Toast the Flatbread
Warm flatbread in the oven for 2–3 minutes or until lightly crisp. (Optional: rub with a tiny bit of olive oil.)
5. Assemble
Spread herbed labneh over warm flatbread. Top with roasted artichokes, arugula/spinach, pine nuts, and shaved Parmesan. Drizzle with lemon oil and garnish with more herbs.
