  • One tablespoon of lightly crushed fennel seeds
  • Three tablespoons of lemon juice
  • Two tsp. lemon zest split
  • Kosher salt and pepper
  • One teaspoon of whole-grain mustard
  • One teaspoon of well-chopped tarragon
  • Three tablespoons of olive oil
  • 3 ounces (about 6 cups) of upland cress or watercress
  • Belgian endive with two heads split outer leaves, and half hearts
  • Two celery stalks, cut in half, with the leaves removed
  • Sliced chives, 1/4 cup
  • One sliced avocado

Instructions For Herbed Shrimp and Watercress Salad:

 

  • First Step
    Toss shrimp with 1/2 teaspoon salt, garlic, fennel seeds, and lemon zest in a bowl. Put aside.

    Mix two tablespoons lemon juice, mustard, tarragon, and half a teaspoon of salt and pepper in a small bowl. Whisk in the oil gradually.
