2 tbsp lemon juice

½ tsp smoked paprika

Salt and pepper to taste

For the Bowls:

2 cups cooked white rice, brown rice, quinoa, or couscous

1 cup cherry tomatoes, halved

1 cup cucumber, chopped

½ cup red onion, thinly sliced

½ cup Kalamata olives, pitted

½ cup crumbled feta cheese

Optional: pita bread wedges or hummus

For the Tzatziki Sauce:

1 cup plain Greek yogurt

½ cup grated cucumber (squeeze out excess water)

1 tbsp olive oil

1 tbsp lemon juice

1 clove garlic, minced

1 tbsp fresh dill or mint (chopped)

Instructions:

1. Marinate the Chicken:

In a bowl, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.

Add chicken and coat well. Cover and refrigerate for at least 30 minutes or up to 2 hours.

2. Cook the Chicken:
