Light and Delicious Chocolate Crispy Bars

Ingredients:

  • 1 18 oz box sugar-free double chocolate brownie mix with chocolate chips
  • 1 egg
  • 1/3 cup unsweetened applesauce (as a replacement for vegetable oil)
  • 1/4 cup water
  • 1 7 oz jar light marshmallow creme
  • 1/3 to 1/2 cup unsweetened flaked coconut
  • 2 cups sugar-free milk chocolate chips
  • 1 cup natural peanut butter (no added sugar)
  • 3 1/2 cups unsweetened cocoa krispies cereal

Instructions: Bottom Layer:

  1. Heat the oven to 325°F and lightly grease a 13×9-inch baking dish/pan.
  2. In a medium bowl, stir together the sugar-free brownie mix, egg, unsweetened applesauce, and water until fully blended.
  3. Spread the brownie batter into the prepared dish/pan.
  4. Bake for 35 to 45 minutes; do not over bake. Let cool completely.
Middle Layer:
  1. When the brownie layer is cool, spread light marshmallow creme evenly over the brownies.
  2. Sprinkle unsweetened flaked coconut over the marshmallow creme.
Top Layer:
  1. Place sugar-free chocolate chips and natural peanut butter in a medium-sized microwave-safe bowl. Microwave until well blended and smooth, stopping at 1-minute intervals to stir.
  2. Once melted and smooth, stir in unsweetened cocoa krispies cereal.
  3. Spread the mixture evenly over the marshmallow and coconut layer.
  4. Cover and chill for 2 hours before cutting into bars.
