Ingredients
For the Pizza Base:
4 flour tortillas (8- inch size, or 2 larger ones, depending on preference)
2 tbsp olive oil (for brushing)
For the Toppings:
1 lb ground beef (or chicken, turkey, or vegetarian crumbles)
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning (or homemade seasoning)
½ cup water
1 cup refried beans (canned or homemade)
2 cups cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1 medium tomato, diced
½ cup black olives, sliced
½ cup green onions, chopped
Jalapenos, sliced (optional for spice)
For Garnish:
Sour cream (optional)
Guacamole (optional)
Fresh cilantro (optional)
Instructions
1. Prepare the Tortillas:
Preheat the oven to 400°F (200°C).
Lightly brush the flour tortillas with olive oil on both sides.
Place the tortillas on a baking sheet and bake for 5-7 minutes until they’re golden and crispy. This will give them a sturdy base for your toppings.
2. Cook the Meat:
In a large skillet, heat 1 tbsp olive oil over medium heat.
Add the chopped onion and cook for about 3-4 minutes, until softened.
Stir in the minced garlic and cook for an additional 30 seconds.
Add the ground beef (or chicken) and cook until browned, breaking it apart with a spoon as it cooks.
Once browned, drain excess fat, if necessary, and add the taco seasoning and ½ cup of water. Simmer for 5 minutes, stirring occasionally.
Set the seasoned meat mixture aside.
3. Assemble the Pizza:
Spread refried beans on each crispy tortilla as a base layer.
Evenly distribute the seasoned meat mixture over the beans.
Sprinkle both cheddar cheese and mozzarella cheese on top, covering the pizza generously.
4. Bake the Pizza:
Place the pizzas back into the oven and bake for 7-10 minutes, or until the cheese is melted and bubbly and the edges of the tortilla are golden brown.
5. Add Fresh Toppings:
Once the pizzas are out of the oven, sprinkle the diced tomato, sliced olives, green onions, and jalapenos (if using) on top.
6. Serve:
Garnish with optional sour cream, guacamole, and fresh cilantro.
