4 bone-in, skin-on chicken thighs

For the Garlic Parmesan Potatoes:

1 ½ lbs (700 g) baby potatoes, halved

3 tbsp olive oil

3 garlic cloves

½ cup grated parmesan cheese

1 tsp dried Italian herbs (oregano + basil)

½ tsp salt

½ tsp black pepper

2 tbsp fresh parsley

Instructions

1. Prepare the chicken:

Preheat oven to 200°C (400°F).

In a small bowl, mix BBQ sauce, honey, olive oil, garlic, paprika, and chili flakes.

Pat chicken dry, season lightly with salt & pepper.

Arrange chicken on a parchment-lined baking tray. Brush generously with the honey BBQ mixture.

2. Roast the potatoes:

Toss halved potatoes with olive oil, garlic, parmesan, Italian herbs, salt, and pepper.

Spread on a separate baking tray (or same tray if large enough) in a single layer, cut side down.

3. Bake:

Place both trays in the oven.

Roast chicken for 35–40 minutes, basting with extra sauce halfway through.

Roast potatoes for 30–35 minutes, flipping once, until crispy and golden.

4. Finish & serve:

For stickier chicken, brush with more BBQ sauce + honey and broil (grill) for 2–3 minutes at the end.

Garnish potatoes with fresh parsley before serving.
