Honey Lime Chicken

2 boneless skinless chicken breasts

1½ tablespoons olive oil

Juice & zest of 1 lime

1½ tablespoons honey

2 cloves garlic, minced

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon paprika

Avocado Lemon Layer

2 ripe avocados

Juice of ½ lemon

Salt to taste

Cauliflower Rice

3 cups cauliflower rice

1 tablespoon olive oil

1 clove garlic, minced

Juice of ½ lemon

Salt & black pepper to taste

Optional Garnish

Fresh parsley or cilantro

Sesame seeds or crushed nuts

Instructions

1. Cook the Honey Lime Chicken

Whisk olive oil, lime juice & zest, honey, garlic, salt, pepper, and paprika.

Coat chicken well.

Grill or pan-sear over medium heat 5–6 minutes per side until golden and juicy.

Rest 5 minutes, then slice.

2. Prepare Cauliflower Rice

Heat olive oil in a pan over medium heat.

Add garlic and saute 30 seconds.

Add cauliflower rice, salt, and pepper.

Cook 5–6 minutes until tender but not mushy.

Finish with lemon juice.

3. Make Avocado Layer

Mash avocados lightly with lemon juice and salt (keep it chunky).

4. Assemble the Stack

Press cauliflower rice into a bowl or ring mold.

Add avocado layer on top.

Finish with sliced honey lime chicken.
