4 large eggs
½ cup cooked chicken breast, diced or shredded
1 tbsp honey
1 tbsp fresh lime juice (plus a little zest)
½ ripe avocado, diced
2 tbsp chopped fresh cilantro
2 tbsp chopped red onion (optional)
½ tsp garlic powder
Salt & black pepper, to taste
Oil or spray, for greasing muffin tin
Instructions:
Preheat oven to 180°C (350°F). Lightly grease a muffin tin or use silicone muffin cups.
In a bowl, whisk the eggs with garlic powder, salt, and pepper.
In a separate bowl, mix chicken with honey and lime juice. Let it marinate for 5 minutes.
Add chicken, avocado, cilantro, and onion into the egg mixture. Stir gently to combine.
Pour the mixture evenly into the muffin cups (about ¾ full).
Bake for 18–22 minutes, or until the egg muffins are set and lightly golden.
