Total Time: 30–35 minutes

Serves: 4–6

Ingredients

For the Tomatoes:

2 cups cherry tomatoes, whole or halved

2 tbsp extra-virgin olive oil

1 garlic clove, minced

½ tsp dried oregano

¼ tsp chili flakes

Salt & freshly ground black pepper, to taste

For the Hot Honey:

3 tbsp honey

¼–½ tsp chili flakes

1 tsp apple cider vinegar or lemon juice

For Serving:

1 large ball burrata cheese

Fresh basil leaves

Crusty bread, pita, or flatbread for dipping

Instructions

Roast the Tomatoes

Preheat oven to 200°C (400°F).

In a baking dish, toss tomatoes with olive oil, garlic, oregano, chili flakes, salt, and pepper.

Roast for 15–20 minutes until tomatoes are softened and slightly blistered.

Make the Hot Honey

In a small saucepan, warm honey over low heat.

Stir in chili flakes and vinegar/lemon juice.

Simmer gently for 1–2 minutes (do not boil), then remove from heat.

Assemble the Dip

Remove roasted tomatoes from oven.

Place burrata in the center of the dish, carefully tearing it open so the creamy center mingles with the tomatoes.

Drizzle generously with hot honey.

Garnish & Serve

Top with fresh basil leaves.

Serve immediately with crusty bread, pita, or flatbread for scooping.

Notes & Tips

Spice Control: You can make a “mild honey” by skipping chili flakes and just using warm honey for sweetness.

Make Ahead: Roast tomatoes ahead of time, then reheat before adding burrata and honey.

Burrata Swap: Fresh mozzarella works too, but burrata’s creamy center makes it extra indulgent.

Frequently Asked Questions

Q: Can I use regular tomatoes instead of cherry?
A: Yes — just cut them into small wedges for even roasting.

Q: Can this be served cold?
A: It’s best warm so the burrata is creamy and spreadable.
