Instant Pot Pinto Beans

Ingredients:
- 1 pound dry pinto beans, rinsed and sorted
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 4 cups water or broth
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Directions:
- Rinse and sort the pinto beans. Set aside.
- Turn the Instant Pot to sauté mode. Add olive oil and chopped onion, cooking until the onion is soft and translucent.
- Add the garlic, cumin, chili powder, and paprika. Cook for another minute, stirring constantly.
- Add the pinto beans, water or broth, salt, and black pepper to the Instant Pot. Stir to combine.
- Secure the lid and set the pressure valve to sealing.
- Cook on high pressure for 35 minutes.
- Allow the pressure to release naturally for 15 minutes, then do a quick release for any remaining pressure.
Carefully remove the lid, stir the beans, and adjust seasoning if necessary. Serve warm.
