Ingredients:

  1. 1 pound dry pinto beans, rinsed and sorted
  2. 1 tablespoon olive oil
  3. 1 medium onion, chopped
  4. 3 cloves garlic, minced
  5. 1 teaspoon ground cumin
  6. 1 teaspoon chili powder
  7. 1 teaspoon paprika
  8. 4 cups water or broth
  9. 1 teaspoon salt
  10. 1/4 teaspoon black pepper

Directions:

  1. Rinse and sort the pinto beans. Set aside.
  2. Turn the Instant Pot to sauté mode. Add olive oil and chopped onion, cooking until the onion is soft and translucent.
  3. Add the garlic, cumin, chili powder, and paprika. Cook for another minute, stirring constantly.
  4. Add the pinto beans, water or broth, salt, and black pepper to the Instant Pot. Stir to combine.
  5. Secure the lid and set the pressure valve to sealing.
  6. Cook on high pressure for 35 minutes.
  7. Allow the pressure to release naturally for 15 minutes, then do a quick release for any remaining pressure.
    Carefully remove the lid, stir the beans, and adjust seasoning if necessary. Serve warm.
