Japanese Chicken Katsu
Chicken Katsu is a popular Japanese dish featuring crispy, golden-brown breaded chicken cutlets served with a tangy tonkatsu sauce. It’s easy to make at home and pairs perfectly with rice, shredded cabbage, or curry.
Ingredients
For the Chicken Katsu:
2 boneless, skinless chicken breasts
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder (optional)
½ cup all-purpose flour
1 large egg
1 tablespoon milk or water
1 cup panko breadcrumbs (Japanese-style breadcrumbs)
½ cup vegetable oil (for frying)
For the Tonkatsu Sauce (Optional):
¼ cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon sugar
½ teaspoon Dijon mustard (optional)
Instructions
Step 1: Prepare the Chicken
1. Butterfly the chicken breasts by slicing them in half horizontally, then gently pound them to an even ½-inch thickness.
2. Season both sides with salt, pepper, and garlic powder.
Step 2: Breading the Chicken
1. Place flour in one shallow bowl.
2. In a second bowl, whisk together egg and milk (or water).
3. In a third bowl, add panko breadcrumbs.
4. Dredge each chicken piece in flour (shake off excess), then dip into the egg mixture, and finally coat it evenly with panko. Press the breadcrumbs gently so they stick well.
Step 3: Fry the Chicken
1. Heat ½ cup of oil in a pan over medium heat.
2. Carefully place the breaded chicken in the oil and fry for 3-4 minutes per side, or until golden brown and crispy.
3. Transfer to a paper towel-lined plate to drain excess oil.
Step 4: Make the Tonkatsu Sauce (Optional)
1. In a small bowl, mix together ketchup, Worcestershire sauce, soy sauce, sugar, and mustard.
2. Stir well and adjust flavors to taste.
Step 5: Serve
Slice the chicken katsu into strips.
Serve with steamed rice, shredded cabbage, or miso soup.
Drizzle with tonkatsu sauce or serve it on the side for dipping.
