Ingredients

For the Juicy Grilled Chicken

2 chicken breasts

1 tbsp olive oil

1 tbsp lemon juice

1 tsp honey

1 garlic clove, minced

1/2 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

For the Salad

3 cups mixed greens (lettuce, arugula, spinach)

1 cup cherry tomatoes, halved

1 small cucumber, sliced

1/2 red onion, thinly sliced

1 avocado, sliced

Optional: olives or crumbled feta

Lemon Herb Dressing

2 tbsp olive oil

1 tbsp lemon juice

1 tsp honey

1/2 tsp Dijon mustard

1/4 tsp oregano

Pinch salt + pepper

Shake or whisk until creamy.

Instructions

1. Marinate the chicken

Mix olive oil, lemon juice, garlic, honey, oregano, salt, and pepper.
Coat the chicken well. Let sit for 10–15 minutes (longer = juicier).

2. Grill the chicken

Heat grill pan or outdoor grill to medium-high.

Cook chicken 5–6 minutes per side until golden and juicy.

Rest 3 minutes, then slice.

3. Build the salad

On a large plate or bowl, layer:

Greens

Cucumbers

Tomatoes

Onion

Avocado

(Optional) feta or olives

4. Assemble

Place sliced grilled chicken on top.
Drizzle with lemon herb dressing.
Serve immediately.

Tips

Super juicy chicken: Pound chicken to even thickness before marinating.
