 Ingredients

For the Salad

3 cups fresh kale, stems removed, chopped

1 cup mixed berries (strawberries, blueberries, raspberries)

¼ cup crumbled feta cheese

2 tbsp sliced almonds or walnuts

1 small apple, thinly sliced

2 tbsp dried cranberries

1 tbsp fresh mint, chopped

For the Honey-Lemon Dressing

2 tbsp extra virgin olive oil

1 tbsp lemon juice

1½ tsp honey

½ tsp Dijon mustard

¼ tsp salt

1–2 grinds black pepper

 Instructions

1. Prepare the Kale

Add chopped kale to a bowl.

Drizzle a few drops of olive oil and gently massage the kale for 30–45 seconds until softer and darker.
This removes bitterness and improves texture.

2. Add the Fruits and Toppings

Add berries, sliced apple, dried cranberries, feta, and nuts over the kale.

3. Make the Dressing

In a small bowl, whisk together:

olive oil

lemon juice

honey

Dijon

salt + pepper

4. Toss the Salad

Pour the dressing over the salad.

Toss gently until everything is coated.

5. Serve

Serve immediately for a juicy, crisp texture—or chill for 10 minutes to help flavors meld.
