Korean corn cheese salad

Korean Corn Cheese Salad

Korean Corn Cheese Salad is a creamy, cheesy, and slightly sweet dish that’s popular in Korean barbecue restaurants. It combines sweet corn, melted cheese, and a creamy dressing, often with a hint of spice for extra flavor. This dish can be served warm or cold and makes a great side dish, snack, or even a dip.

Ingredients

1 ½ cups canned sweet corn (drained) or fresh corn kernels

½ cup shredded mozzarella cheese

2 tablespoons mayonnaise (Kewpie mayo recommended)

1 tablespoon unsalted butter

½ teaspoon sugar

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chopped green onions (for garnish)

½ teaspoon gochugaru (Korean chili flakes) or paprika (optional, for spice)

1 teaspoon chopped parsley (optional, for garnish)

Instructions

1. Saute the Corn:

In a skillet over medium heat, melt butter.

Add corn, sugar, salt, and black pepper. Saute for 2-3 minutes until warm.

2. Mix in Mayo & Cheese:

Stir in mayonnaise and mix well.

Sprinkle shredded mozzarella evenly over the top.

3. Melt the Cheese:

Lower the heat and cover the skillet for 2 minutes, or until the cheese is melted.

Alternatively, transfer to an oven-safe dish and broil for 2-3 minutes until golden and bubbly.

4. Serve:

Sprinkle with green onions, gochugaru, and parsley if using. Serve hot as a side dish or dip.

For Cold Corn Cheese Salad (Refreshing Version):

In a bowl, combine drained corn, mayonnaise, sugar, salt, black pepper, and gochugaru (if using).

Add shredded mozzarella and mix well.

2. Chill & Serve:

Refrigerate for at least 10 minutes before serving.

Garnish with green onions and parsley.
