2 large leeks, white & light green parts only
1 tbsp olive oil
1 tbsp butter
1 tsp fresh thyme (or ½ tsp dried)
Salt, to taste
Black pepper, to taste
120–150 g Brie cheese, sliced (rind on or off—your choice)
For Finishing
1 egg, beaten (egg wash)
1 tbsp milk or cream
Fresh thyme or parsley
Instructions
1. Make the Dough
In a bowl, mix flour, salt, and sugar.
Rub in cold butter until crumbly.
Add ice water gradually and bring dough together.
Shape into a disk, wrap, and chill for 20 minutes.
2. Prepare the Leeks
Slice leeks lengthwise, rinse well to remove grit, then thinly slice.
Heat olive oil and butter in a pan over medium heat.
Add leeks, salt, pepper, and thyme.
Cook gently for 10–12 minutes until soft and lightly caramelized.
Let cool slightly.
3. Assemble the Galette
Preheat oven to 190°C (375°F).
Roll dough into a 30 cm (12-inch) circle on parchment paper.
Spread leeks in the center, leaving a 5 cm (2-inch) border.
Top evenly with Brie slices.
Fold edges over filling, pleating gently.
4. Bake
Brush crust with egg wash.
Bake for 35–40 minutes until golden brown and bubbly.
Rest for 10 minutes before slicing.
