Lemon Greek Yogurt Parfait

Ingredients (Serves 2):

1 cup Greek yogurt (plain or vanilla)

1–2 tbsp lemon juice (freshly squeezed)

1 tsp lemon zest

1–2 tsp honey or maple syrup (adjust to taste)

1/2 cup granola

1/2 cup fresh berries (blueberries, raspberries, or sliced strawberries work well)

Optional: crushed graham crackers or toasted coconut for added crunch

Instructions:

Mix the yogurt base

In a bowl, combine Greek yogurt, lemon juice, lemon zest, and sweetener. Stir until smooth and creamy. Taste and adjust lemon or sweetness if needed.

Layer the parfait

In a glass or jar, layer:

2 tbsp lemon yogurt

2 tbsp granola

2 tbsp berries

Repeat layers until the glass is full or ingredients are used up.

Top it off

Finish with a sprinkle of lemon zest, a drizzle of honey, and optional toppings like crushed graham crackers or toasted coconut.

Chill or serve immediately

You can refrigerate it for 15–30 minutes to let flavors meld, or serve it right away.
