Lemon Pesto Chicken Souvlaki Bowl with Pine Nuts
Ingredients:
2 chicken breasts, cut into cubes
2 tbsp olive oil
Salt and pepper, to taste
1 tsp dried oregano
1 cup cooked rice or couscous
1/2 cup cherry tomatoes, halved
1/2 cucumber, diced
2 tbsp toasted pine nuts
3 tbsp lemon pesto (store-bought or homemade)
Fresh parsley, chopped (for garnish)
Directions:
Preheat a skillet over medium heat. Toss chicken cubes with olive oil, oregano, salt, and pepper. Cook for 6–8 minutes until golden and cooked through.
In serving bowls, layer cooked rice or couscous, cherry tomatoes, and cucumber.
Place cooked chicken on top and drizzle with lemon pesto.
Sprinkle toasted pine nuts and chopped fresh parsley over the bowls. Serve warm.
