Lentil and Potato Soup with Herbs

Ingredients:
- 1 cup green or brown lentils, rinsed and drained
- 2 medium potatoes, peeled and diced
- 1 large carrot, peeled and chopped
- 1 celery stalk, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika (optional)
Salt and pepper to taste
Fresh herbs:
- 1/4 cup chopped parsley, plus extra for garnish
- 1 bay leaf
- 1 teaspoon lemon juice, for serving
Directions:
- Prep the Vegetables: Start by dicing potatoes, carrots, celery, and onion, and mince the garlic.
- Cook Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Sauté for about 5 minutes, until softened and fragrant.
- Add Spices: Stir in cumin, coriander, and smoked paprika. Cook for another minute, allowing spices to bloom.
- Add Lentils and Potatoes: Add the lentils, potatoes, bay leaf, and vegetable broth to the pot. Season with salt and pepper.
- Simmer the Soup: Bring to a boil, then reduce to a simmer. Cover and cook for 30-35 minutes, or until the lentils and potatoes are tender.
Finish with Herbs and Lemon: Stir in fresh parsley and a squeeze of lemon juice. Adjust seasoning if needed. - Serve: Ladle into bowls, garnish with extra parsley, and enjoy warm!
