Lentil Burger Recipe

- 1 large shallot
- 2 cloves garlic
- ¼ cup Italian parsley leaves
- 2 Fresno chili, stems removed, roughly chopped (optional, adjust spice level)
- 1½ tsp ground cumin
- 1 tsp kosher salt, divided
- Fresh cracked black pepper to taste
- ⅓ cup seasoned breadcrumbs
- 1 large carrot, shredded
- 1 large egg
- 2 cans lentils (15 oz each, about 3½ cups), rinsed, drained, and patted dry (divided)
- 4 oz goat cheese (or feta), crumbled
- 5.3 oz plain Greek yogurt (one container or generous ½ cup, preferably 5% fat)
- 1 tbsp apple cider vinegar
- ½ tbsp honey
- olive oil, for cooking the burgers
- 6 burger buns or pitas
- 6 slices tomato
- 3 handfuls arugula
Tips:
