2 medium sweet potatoes, peeled and cubed

1 red bell pepper, chopped

1 zucchini, sliced into half-moons

1 red onion, cut into wedges

1 can (15 oz / 400 g) chickpeas, drained, rinsed, and patted dry

3 tbsp olive oil

1 tsp smoked paprika

½ tsp cumin

Salt & black pepper, to taste

2 cups cooked quinoa, couscous, or brown rice

Fresh parsley or cilantro, for garnish

Maple Dijon Tahini Drizzle

  • 3 tbsp tahini
  • 1 tbsp Dijon mustard
  • 1 tbsp pure maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp warm water
  • Salt & pepper, to taste
Instructions

Roast veggies & chickpeas

Preheat oven to 400°F (200°C).

On a baking sheet, toss sweet potatoes, bell pepper, zucchini, onion, and chickpeas with olive oil, paprika, cumin, salt, and pepper.

Spread evenly and roast for 25 minutes, flipping halfway, until golden and tender.

Prepare drizzle

In a bowl, whisk together tahini, Dijon, maple syrup, lemon juice, and warm water until smooth and creamy. Adjust consistency with more water if needed.

Assemble bowls

Place quinoa/rice at the base of each bowl.

Top with roasted veggies and chickpeas.
