A Mediterranean Air-Fryer Rice Paper Spinach Pie is a crispy, lighter twist on traditional spanakopita. Instead of phyllo dough, rice paper sheets are used to create a crunchy outer layer, filled with a savory mixture of spinach, herbs, and feta cheese.

Ingredients
For the Filling
2 cups fresh spinach, chopped (or frozen, thawed & drained)
½ cup feta cheese, crumbled
¼ cup ricotta cheese (optional, for creaminess)
2 tbsp fresh dill or parsley, chopped
2 cloves garlic, minced
2 tbsp green onions, chopped
1 tbsp olive oil
¼ tsp salt
¼ tsp black pepper
For the Rice Paper Layers
6–8 rice paper sheets
2 tbsp olive oil (for brushing)
2–3 tbsp water (for softening sheets)
Instructions
1. Prepare the Filling
1. Heat olive oil in a pan over medium heat.
2. Add garlic and green onions, sauté for 1–2 minutes.
3. Add spinach and cook until wilted (or warmed through if using frozen).
4. Remove from heat and let cool slightly.
5. Mix in feta, ricotta, herbs, salt, and pepper.
2. Prepare the Rice Paper Layers
6. Lightly dip each rice paper sheet in water for a few seconds until soft.
7. Lay on a clean surface and brush lightly with olive oil.
3. Assemble the Pie
8. Layer 2–3 rice paper sheets in the air fryer basket or pan.
9. Add the spinach filling in the center.
10. Cover with remaining rice paper sheets, folding edges inward to seal.
4. Air Fry
11. Brush the top lightly with olive oil.
12. Air fry at 375°F (190°C) for 12–15 minutes until golden and crispy.
5. Serve
13. Let cool slightly, slice, and serve warm.
Tips
Drain spinach well to avoid a soggy filling.
Don’t oversoak rice paper—it should be soft but not tearing.
Brush lightly with oil for a crispy golden finish.
Add egg to the filling for a firmer texture (optional).
