Instructions
1. Preheat Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Base
In a small oven proof dish or cast-iron skillet, spread the cherry tomatoes, red onion, and garlic.
Drizzle with olive oil, then season with oregano, red pepper flakes, black pepper, and a pinch of salt. Toss to combine.
3. Add Feta
Place the feta block in the center of the dish, nestled among the tomatoes and onions.
4. Bake the Feta
Bake uncovered for about 15 minutes, until the tomatoes soften and the feta begins to slightly brown at the edges.
5. Add the Eggs
Remove from the oven and carefully crack two eggs over the dish, spacing them apart.
