Mediterranean Baked Fish Recipe
Ingredients:
4 white fish fillets (cod, haddock, halibut, or sea bass)
3 tbsp extra virgin olive oil
3 garlic cloves, minced
1 lemon (zest and juice
1 cup cherry tomatoes, halved
1/3 cup kalamata olives, pitted and halved
1 small red onion, thinly sliced
1 tsp dried oregano (or 1 tbsp fresh oregano)
Salt and pepper to tast
Fresh parsley, chopped (for garnish)
Optional: capers or sliced bell pepper for extra flavor Instructions:
Preheat Oven to 400°F (200°C).
Prepare the baking dish:
Drizzle 1 tbsp of olive oil over the bottom of a baking dish.
Arrange the fish fillets in a single layer.
Add toppings:
Scatter cherry tomatoes, olives, and red onion over and around the fish.
Sprinkle minced garlic, lemon zest, and oregano evenly on top.
Season:
Drizzle remaining olive oil and squeeze lemon juice over everything.
Add salt and pepper to taste.
Bake:
Bake uncovered for 15–20 minutes (depending on thickness), until the fish flakes easily with a fork.
Garnish:
Sprinkle fresh parsley before serving.
Serving Suggestions:
Serve over couscous, quinoa, or orzo.
Pair with a side salad (like Greek salad or arugula with lemon vinaigrette).
