4 fillets of white fish (such as cod, sea bass, halibut, or snapper)

3 tbsp extra virgin olive oil

2 tbsp lemon juice

2 cloves garlic, minced

1 cup cherry tomatoes, halved

½ cup Kalamata olives, sliced

1 tbsp capers, drained

½ cup red onion, finely chopped

½ cup fresh parsley, chopped

1 tsp dried oregano

½ tsp dried thyme

½ tsp red pepper flakes (optional, for spice)

Zest of 1 lemon

Instructions

Step 1: Preheat Oven & Prepare Fish

Preheat your oven to 375°F (190°C).

Pat the fish fillets dry with a paper towel and place them in a greased baking dish.

Drizzle with olive oil and lemon juice.

Season with salt, pepper, and minced garlic.

Step 2: Prepare the Mediterranean Herb Mixture

In a bowl, combine cherry tomatoes, olives, capers, red onion, parsley, oregano, thyme, red pepper flakes, and lemon zest.

Toss everything together and spread evenly over the fish fillets.

Step 3: Bake the Fish
