INGREDIENTS: 

2 large baking potatoes, peeled and cubed

2 boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets

1/4 cup fresh lemon juice (about 1 large lemon)

4 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon smoked paprika

1/2 cup crumbled feta cheese

1 cup plain Greek yogurt

salt and pepper to taste

2 tablespoons fresh parsley, chopped (optional)

INSTRUCTIONS:

1. Prepare the Potatoes:

Preheat the oven to 375°F (190°C).

Toss the cubed potatoes with half of the olive oil, salt, pepper, and smoked paprika. Spread them evenly on a baking sheet.

Roast the potatoes in the preheated oven for 20-25 minutes, or until tender and golden brown.

2. Cook the Chicken:

While the potatoes are roasting, season the chicken pieces with salt, pepper, and half of the minced garlic.

In a large skillet over medium-high heat, cook the chicken until browned and cooked through, about 6-8 minutes. Set aside.

3. Prepare the Broccoli:

In a large mixing bowl, combine the roasted potatoes, cooked chicken, and steamed broccoli.

Pour the yogurt sauce over the mixture and stir until everything is evenly coated.

Transfer the mixture to a greased 9×13-inch baking dish and spread it out evenly.

Sprinkle the crumbled feta cheese on top.

6. Bake the Casserole:

Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the top is golden brown.
