3–4 medium beetroot
2 tbsp olive oil
Salt & black pepper, to taste

¾ cup full-fat ricotta cheese
1 tbsp Greek yogurt (optional, for extra creaminess)
1 tsp lemon zest
1 tsp lemon juice
Salt, to taste
Toppings & Finish
3 tbsp pistachios, finely chopped

Extra virgin olive oil, for drizzling

Instructions
1. Roast the Beets
Preheat oven to 200°C (400°F).
Wrap beets individually in foil with a drizzle of olive oil and salt.
Roast 40–45 minutes until tender.
Cool slightly, peel, and slice very thinly using a sharp knife or mandoline.
2. Make the Ricotta Filling
In a bowl, mix ricotta, yogurt (if using), lemon zest, lemon juice, and salt.
Stir until smooth and creamy.
3. Assemble the Rolls
Lay a beet slice flat.
Spoon ricotta onto one end and gently roll.
Repeat with remaining slices.
4. Garnish & Serve
Arrange beet rolls on a plate.
Sprinkle with chopped pistachios and fresh greens.
Drizzle with olive oil (and honey or balsamic if using).
