Ingredients

3 medium potatoes, boiled and cubed

1 cup asparagus, trimmed and cut into 2-inch pieces

2 tbsp olive oil

2 tbsp roasted peanuts, roughly chopped

¼ cup shredded cheese (feta, mozzarella, or mild cheddar)

1 clove garlic, minced

1 tsp lemon juice

1 tsp fresh parsley, chopped (optional)

Salt and pepper, to taste

Instructions

1. Boil the potatoes:

Wash and peel (optional) the potatoes.

Cut into cubes and boil in salted water for 10–12 minutes until tender but not mushy. Drain and set aside.

2. Prepare the asparagus:

Heat 1 tbsp olive oil in a an over medium heat.

Add minced garlic and sauté for 30 seconds.

Add asparagus and cook for 3–5 minutes until tender-crisp. Season lightly with salt and pepper.

3. Toast the peanuts:

In a small pan, lightly toast the peanuts over low heat for 1–2 minutes until fragrant.

4. Combine ingredients:

In a large bowl, gently toss the boiled potatoes, sautéed asparagus, toasted peanuts, and shredded cheese.

Drizzle with 1 tbsp olive oil and lemon juice. Mix gently.

5. Garnish and serve:

Sprinkle chopped parsley over the top. Serve warm or at room temperature.

Tips

Cheese alternatives: Use halloumi, goat cheese, or Parmesan for variation.

Extra flavor: Add a teaspoon of mustard or a light yogurt dressing for creaminess.
