1 tbsp olive oil
Grain Base
1½ cups cooked couscous, bulgur, or quinoa
Avocado Salad
1 large avocado, diced
1 cup cherry tomatoes, halved
½ cucumber, diced
1 tbsp olive oil
1 tbsp lemon juice
Salt to taste
Yogurt Tahini Sauce
½ cup Greek yogurt
1 tbsp tahini
1 tbsp lemon juice
1 small garlic clove, grated
Salt to taste
Water to thin
Instructions
Make the Lamb Meatballs
In a bowl, mix lamb, breadcrumbs, onion, garlic, parsley, spices, salt, and pepper.
Form small meatballs.
Heat olive oil in a skillet and cook meatballs over medium heat 8–10 minutes, turning until browned and cooked through.
Prepare the Sauce
Whisk yogurt, tahini, lemon juice, garlic, salt, and a splash of water until smooth.
Prepare the Avocado Salad
Gently toss avocado, tomatoes, cucumber, olive oil, lemon juice, and salt.
Assemble the Bowl
Add grain base to bowls.
Top with lamb meatballs and avocado salad.
Drizzle with yogurt tahini sauce.
