Skill Level: Medium

Ingredients

For the broccoli Crust:

1 full broccoli (about 4 cups riced)

1 large egg

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tsp dried Italian hers (oregano, basil, thyme)

1/2 tsp garlic powder

Salt and pepper, to taste

For the Toppings:

1/2 cup tomato sauce or pizza sauce

1 cup shredded mozzarella cheese

Optional toppings: sliced mushrooms, bell peppers, olives, pepperoni, fresh basil, cherry tomatoes, etc.

Instructions

Step 1: Prepare Cauliflower Rice

Preheat oven to 425°F (220°C).

Remove stems and leaves from broccoli chop into florets.

Pulse in a food processor until broccoli resembles rice grains (about 4 cups).

Transfer broccoli rice to a microwave-safe bowl and microwave for 4-5 minutes until soft. Let cool slightly.

Step 2: Remove Excess Moisture

Place the cooked broccoli rice in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial for a crispy crust!

Step 3: Make the Crust Dough

In a bowl, combine the drained broccoli rice, egg, mozzarella, Parmesan, Italian herbs, garlic powder, salt, and pepper. Mix well until combined.

Step 4: Shape and Bake the Crust

Line a baking sheet or pizza stone with parchment paper.

Press the broccoli mixture firmly into a 9-inch circle, about 1/4 inch thick.

Bake for 15-18 minutes until golden and set.

Step 5: Add Toppings and Finish Baking

Remove crust from oven. Spread tomato sauce evenly over crust.

Sprinkle shredded mozzarella and your choice of toppings.

Bake an additional 7-10 minutes until cheese melts and toppings are cooked.

Step 6: Serve

Let pizza cool for 5 minutes before slicing. Garnish with fresh basil or chili flakes if desired.

Notes & Tips

Dry broccoli well: Excess moisture is the biggest challenge for a crisp crust. Use a clean towel to squeeze tightly.

Cooking time may vary: Oven temperatures differ; watch the crust carefully to avoid burning.

Double the crust recipe: For a larger pizza, double ingredients and shape into a 12-inch circle.
