Mediterranean Burrito Bowl with Lemon Herb Chicken & Hummus
A delicious twist on the classic burrito bowl, this Mediterranean version features lemon-herb grilled chicken, fluffy rice, fresh veggies, hummus, olives, and a creamy yogurt-tahini drizzle. It’s hearty, healthy, and deeply satisfying.

Ingredients:
For the Lemon Herb Chicken:
2 boneless chicken breasts or thighs
1 tbsp olive oil
Juice of ½ lemon
1 garlic clove, minced
½ tsp oregano
Salt and pepper
Bowl Base:
1 cup cooked brown rice, white rice, or couscous
½ cup cherry tomatoes, halved
½ cup cucumber, diced
¼ cup red onion, thinly sliced
¼ cup kalamata olives, halved
½ avocado, sliced
2 tbsp hummus
Baby spinach or romaine lettuce
Yogurt-Tahini Drizzle:
¼ cup Greek yogurt
1 tbsp tahini
1 tbsp lemon juice
1 tbsp olive oil
1 garlic clove, grated
Salt, water to thin
Instructions:
1. Marinate & Cook Chicken:
Mix oil, lemon juice, garlic, oregano, salt & pepper. Marinate chicken for 15 mins. Grill or pan-sear until cooked (5–6 mins per side), then slice.
2. Prepare Yogurt-Tahini Sauce:
Whisk yogurt, tahini, lemon juice, olive oil, garlic, and a bit of water until creamy.
3. Assemble the Bowl:
In each bowl, layer rice, greens, chicken, tomato, cucumber, onion, olives, avocado, and hummus. Drizzle with sauce and sprinkle fresh herbs on top.

Marinate Longer: For maximum flavor, marinate the chicken for at least 2 hours, or overnight if possible. The lemon, garlic, and herbs will deeply penetrate the meat.
