Ingredients

3 large carrots, peeled and grated

1 tsp ground cumin

Salt and pepper, to taste

For the Borek:

8 sheets phyllo dough (thawed if frozen)

4 tbsp  olive oil (for brushing)

Instructions

Step 1: Prepare the Filling

1. Heat olive oil in a skillet over medium heat.

2. Add onion and garlic, sauté until translucent (about 3–4 minutes).

3. Add grated carrots and cumin, cook for 5–7 minutes until carrots are softened.

4. Remove from heat, stir in crumbled feta, parsley, dill (if using), salt, and pepper. Mix well and let cool.

Step 2: Assemble the Borek 

1. Preheat oven to 375°F (190°C).

2. Lightly brush a baking sheet with olive oil.

3. Lay one sheet of phyllo dough flat and brush it lightly with olive oil.

4. Place another sheet on top and brush again.

5. Cut the layered phyllo sheets into 3 strips (lengthwise).

6. Place about 2 tablespoons of filling at one end of each strip.

7. Fold the corner of the strip over the filling to form a triangle; continue folding the triangle down the strip like a flag until you reach the end.

8. Place the filled triangles on the baking sheet, brush tops with more olive oil.

Step 3: Bake

1. Bake for 25–30 minutes until golden brown and crisp.

Keep phyllo dough covered with a damp towel while working to prevent drying.

Feta can be substituted with ricotta or goat cheese for a milder flavor.
