Ingredients

For the Chicken Skewers:

500g (1 lb) boneless, skinless chicken breast or thighs (cut into 1-inch cubes)

3 tbsp olive oil

3 cloves garlic

Juice of 1 lemon

1 tsp dried oregano

1 tsp paprika

½ tsp ground cumin

½ tsp black pepper

1 tsp salt

Wooden or metal skewers (if wooden, soak in water 20 minutes before grilling)

For the Yogurt Herb Dipping Sauce:

1 cup Greek yogurt

2 tbsp olive oil

1 tbsp lemon juice

1 clove garlic

2 tbsp fresh dill

2 tbsp fresh mint or parsley

Salt & pepper to taste

Instructions

1. Marinate the Chicken

In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.

Add chicken cubes and toss until well coated.

Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

2. Prepare the Yogurt Herb Dipping Sauce

In a small bowl, mix yogurt, olive oil, lemon juice, garlic, dill, and mint/parsley.

Season with salt and pepper to taste.

Chill until ready to serve.

3. Grill the Skewers

Preheat a grill pan or outdoor grill to medium-high heat.

Thread marinated chicken onto skewers.
