Mediterranean Chicken Skewers with Mezze Platter

Ingredients

For the Chicken Skewers

500 g chicken breast, cut into bite-sized cubes

2 tbsp olive oil

2 tbsp lemon juice

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp smoked paprika

Salt & black pepper to taste

Wooden or metal skewers

For the Mezze Platter

 

1/2 cup hummus

 

1/2 cup tzatziki

 

1/2 cup marinated olives

 

1/2 cup cherry tomatoes

 

1/2 cup cucumber slices

 

1/4 cup crumbled feta

 

Pita bread or flatbreads, cut into triangles

 

Directions

 

In a bowl, combine olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper.

 

Marinate chicken cubes for 20–30 minutes.

 

Preheat grill or grill pan over medium-high heat.

 

Thread chicken onto skewers.

 

Grill skewers for 4–5 minutes per side, or until fully cooked and golden.

 

Arrange chicken skewers on a large platter.

 

Surround with hummus, tzatziki, olives, cherry tomatoes, cucumber, feta, and pita triangles to create a colorful mezze platter.

 

Serve immediately as a festive and shareable meal.
