Mediterranean Crispy Smashed Potato Salad

Ingredients
For the Crispy Potatoes:
1 ½ lbs (700g) baby potatoes
3 tbsp olive oil
1 tsp dried oregano
½ tsp smoked paprika
Salt & black pepper, to taste
For the Salad:
1 cup cherry tomatoes, halved
½ cucumber, diced
¼ cup Kalamata olives, halved
¼ red onion, thinly sliced
½ cup crumbled feta cheese
2 tbsp fresh parsley or dill, chopped
For the Dressing:
3 tbsp extra virgin olive oil
1 ½ tbsp lemon juice
1 tsp Dijon mustard
1 garlic clove, finely grated
½ tsp honey (optional)
Salt & pepper, to taste
Instructions
1. Boil Potatoes:
Place potatoes in salted water and simmer 15–20 minutes until fork-tender. Drain.
2. Smash & Roast:
Preheat oven to 425°F (220°C).
Place boiled potatoes on a lined baking sheet.
Gently smash each with the bottom of a glass until flattened.
Drizzle with olive oil, sprinkle oregano, paprika, salt, and pepper.
Roast 20–25 minutes until golden and crispy.
3. Make Dressing:
Whisk together olive oil, lemon juice, mustard, garlic, honey, salt, and pepper.
4. Assemble Salad:
Arrange crispy potatoes on a platter.
Top with tomatoes, cucumber, olives, red onion, and feta.
Drizzle with dressing.
Garnish with parsley or dill.
