Ingredients

For the Greek Chicken

1 ½ lbs (700 g) boneless, skinless chicken breasts or thighs

3 tbsp olive oil

2 tbsp fresh lemon juice

1 tsp lemon zest

3 cloves garlic, minced

1 ½ tsp dried oregano

½ tsp ground cumin

½ tsp salt

¼ tsp black pepper

Optional: ½ tsp smoked paprika (for a warm, earthy flavor)

For the Tzatziki Sauce

1 cup Greek yogurt

½ cucumber, grated and excess liquid squeezed out

1 clove garlic, minced

1 tbsp fresh dill, finely chopped (or 1 tsp dried)

1 tbsp lemon juice

1 tsp olive oil

For the Bowl

2 cups cooked rice, lemon rice, or quinoa

1 cup cherry tomatoes, halved

½ cup cucumber, diced

¼ cup red onion, thinly sliced

¼ cup kalamata olives, sliced

¼ cup crumbled feta cheese

Optional: chopped parsley or mint for garnish

1. Marinate and Cook the Chicken

1. In a bowl, whisk together olive oil, lemon juice, zest, garlic, oregano, cumin, salt, and pepper.

2. Add chicken and toss to coat evenly.

3. Cover and marinate for 30 minutes to 2 hours (in the fridge).

4. Grill or pan-sear over medium heat for 5–6 minutes per side, until golden brown and cooked through.
